If you are up to wiring, fiddeling with connectors, exposing
yourself to lead and extreme heat then you may find it fun
and useful to convert a PC joystick to the Apple IIgs.  They
work off very similar principles (if not the same).  In fact
you may be able to build a PC to Apple IIgs converter.
