That's Clarus the Dogcow!  It's been the mascot of Apple engineers for
nearly fifteen years.  It's the letter "z" in the Cairo font from the
original Mac.  It's supposed to be a dog, but they discovered that at larger
sizes it looks like a weird dog/cow hybrid.  Hence the Dogcow.

There's a Macintosh Technical Note explaining the history of the Dogcow.  I
don't recall the number at the moment, but you should be able to find it on
Apple's developer site if you want to read it.
