You can do something very similar to the Video Overlay Card option in
SuperConvert (where you can view the converted graphic on the VOC
output and the GS video output on your RGB), with a certain 80 column
card (not apples, not ramworks).

I saw it done a few years ago.  I don't know what hardware was used.
