The A2 and A2Pro forums have a volunteer staff member running a chat
every night of the week (unless they've changed the schedule
recently).  Practically every time I visit the A2 forum, there is
someone in the chat area.

There was also a couple IRC channels for Apple II discussions
althought the #appleiigs one was apparently usurped for other uses by
some ex-Apple II users.  Jawaid Bazyar set up #appleii but it was
hardly ever used but I think it still exists.

There have been posts here about a monthly Apple II chat on AOL as
well.  I think it was the first Thursday of the month.

Probably the biggest, regular Apple II chat would be the one hosted by

Joe Kohn in the chat area of the A2 Forum on Delphi every Monday night
between 10 and 12 PM Eastern.
