The disk you need most is probably the ProDOS 3.2 utilities which can
be downloaded from:

<ftp://ftp.apple.com//Apple_Support_Area/Apple_Software_Updates/US/
  Apple_II/Apple_II_Supplemental/Apple_II_System_Disk_3.2.sea.bin>

Given that you're having problems with recent versions of DiskCopy, try
going back to the earlier version, V4.2. You may also find that it
helps to boot your Mac with Extensions Off when trying to write a disk.

If you're still stuck, let me know and I'll sort out some disk utils
via snail mail.
