What makes collectables valuable is a combination of goodness and
rareness/uniqueness. The valueable models are the earlyest Apple II's,
IIgs's with all the goodies, and the IIc+. The first because they are
historic and hard to find, the second because they were the top of the line
(goodies like accellerator and SCSI cards are worth more than the rest of
the system). The IIc+ because of the combination of performance and style.
IIe's are so common (schools have piles of them) that I doubt they will ever
be nearly as valuable as those other models.
That's just my opinion, I'd be interested in hearing others.
