Should work fine.
You will be able to communicate with other machines on the Ethernet
which are running the AppleTalk protocol stack (e.g. a Mac file server),
but you won't get any other Ethernet protocol support (e.g. TCP/IP).
I've had a IIgs talking to a Mac in this manner, with Apple's LocalTalk
Bridge software on an intervening Mac. This should be same in principle
as the AsanteTalk.
You won't get any speed benefits from this, as the IIgs is limited by
the speed of the LocalTalk connection.
There is a MacIP protocol which allows TCP/IP to be encapsulated in
AppleTalk packets, and I seem to recall that one of the IIgs TCP/IP
projects supports this.

What do you want to achieve with this connection?
