I do have a LocalTalk network (well, one cable that is). And yes, I
agree that it's the easiest way to transfer files between the two
machines. However,

A Powerbook with only one serial connector. I have to use this for my
modem, my printer and the LocalTalk cable. So, if I want to switch from
printing to networking or anything, I have to exchange cables first. And
most of the time the localTalk cable isn't connected.
I have tried to find solutions for this: for instance the printer driver
seems to think that this particular printer could also be driven through
an AppleTalk connection, rather than via a simple serial cable. But when
I tried that, it didn't work.
And I asked a while back in this newsgroup if it was possible to connect
an AirDock to the IIgs so that I could do AppleTalk over the IR port of
my Powerbook, freeing up the serial port. But it appeared that wasn't
possible.
