I set up a 32 MB partition on my IIgs just to use as my boot
partition.  Very little else is on that partition other than my System
folder and it is currently 12.8 MB.  I have lots of add ons installed
but not all of them are active all the time.

But you are correct in that 8 bit machines don't need a whole lot of
space.  I have a 61 MB AMR hard drive that I think will give my IIe
lots of storage space.
