If you want to use the method that requires the GS to read a Mac floppy
(Mac HFS not ProDos formatted), you will almost certainly need GS/OS 6.
The ability of GS/OS to read Mac HFS disks, using a Mac 'File System
Translator' (FST) was introduced with GS/OS 6.0 (early '92 as I recall).
I'm not aware that Mac HFS FST functionality was later extended back
to GS/OS 5.x (anyone have more details on this ?).
On the other hand, if you can get the Mac to reliably write to ProDos
800K floppies (best of luck, I gave up trying), then GS/OS 5.x should
be fine.
