For the Apple IIe, the pinnacle is ProTERM 3.1 from
http://www.intrec.com/ Intrec. See the web site for a
description.
For the Apple IIGS, it has got to be Spectrum 2.2 with
SIS, the IIGS web browser. TCP/IP is available for the
IIGS. See

For BBS software there was GBBS Pro and METAL/FV
and also ProLine. The last two allowed UUCP
connections to Unix servers for the purpose of email
and newsgroups from the BBS nodes.
Baud rates: 14.4k (19.2 port speed) on the IIe and for
the IIGS, 56k port speeds. The IIGS can use all external
modems.

Ah, but GS stuff is still evolving. ;-)
We have the web browser, the ftp client, telnet, but we
are still waiting for the imminent release of the email
client.
The IIe stuff has reached the end of its evolution.
Zmodem, VT100, and ProTERM 3.1 are the end result.
