Why use AFE or PCFE?  The Apple IIGS can format, read and write
Macintosh HFS disks.  Just install the HFS FST, copy your files to
a Mac disk using the IIGS Finder, and take the disk to a Mac!  That's
it!

Yes, the Mac drive can access both DS/HD and DS/DD 3.5" disks.

Thus, getting files to the Mac is not an issue.

Converting them to Mac programs...I tend to use the following formats:

ASCII for text files
Postscript for page layout files (just use the IIGS LaserWriter driver
     and the "print to postscript" option, then just load up the postscript
     file on the Mac).
RTF for formatted word processing files
