I am trying to remember the answer to this question.  As far as I can
remember, you can't.  But there are options.
First, the version of CP/M for the AE Z80 card may have hard drive support,
and may work with your card.
Second, and best, switch to a PCPI Applicard.  It is much faster, and there
is hard drive support available from Steve Hirsch, who sometimes reads and
posts here.
Third, you could use a Sider hard drive, which has its own partitioning 
software for CP/M.

There is a web page on Apple CP/M, which you should be able to find, which
may have even better answers.
