Well, it is a good application of using an Apple II but they aren't
exactly using the IIgs' capabilities. After all, they are running
AppleWorks classic and ProTerm which can run on almost any Apple II.

However, it is still a good thing to see Apple II machines being saved
from going into landfills and still being used.

Getting back to speech recognition, there was some hardware that
allowed speech recognition with Apple II machines. I think the Covox
VoiceMaster (I think that was the name) was available for the Apple
II. I played with one on a C-64 many years ago.

I also know that Steve Ciarcia who wrote the column Ciarcia's Circuit
Cellar in Byte magazine also did a hardware project that was a slot
card for the Apple II that could recognize either 32 or 64 commands or
short phrases. I used to have those articles but I'm not sure if I
still do. I always wanted to build it.

By the way, a simple voice recognition system could probably be
written for the IIgs fairly easily but it would require a machine with
lots of memory, hard drive space and probably an accelerator. The
method I thought about probably wouldn't work the greatest either but
it could be done. :)
