You can actually access as many drives as you have online.
It would be possible to put 7 disk II controller cards into a IIe, put
a different disk in each drive (with a different name) and access the
correct disk just by using it's prefix. You could then switch all the
disks around and ProDOS will go and start looking through all the drives
in it's device list to find that volume again.
The only real problem I've ever run across with this is that ProDOS 8
has some problems dealing with removeable SCSI devices.
