I figured it out, by accident.  Maybe someone should add this to the
Apple II archives:

To change the size of the capture rectangle,  bump the rectangle into the top
edge of the screen.  Continue to push the UP ARROW key, and the rectangle
will get smaller vertically.  You can also bump the rectangle into the left
side of the screen, and continue to push the LEFT arrow, and the rectangle
will get smaller horizontally.

It would be nice if you could hold an apple key instead of bumping the edge
of the screen...
