Unfortunately, the Game Boy's screen is addressed digitally, using an
internal proprietary protocol within the machine itself.
Apple II displays are analog. Unless you know a lot of electrical and
computer engineering and are willing to reverse-engineer the Game Boy's
display protocols and construct your own A/D converter that can drive
the display, the answer is no.
You'd probably have better luck finding a used //c LCD display from
Apple or VUE (I believe that was the company, correct me if I'm wrong)
Just because two systems are "8 bits" doesn't mean they are compatible.
"8/16/32 bit" and the like has lately become more of a marketing tool
than a useful way of expressing the capabilities of a machine, so it is
much better if you disregard it. }:)
