We don't have to use the full 12Mbps transfer potential of USB.
You can always run the devices with less than max transfer rate.

Second, when and if an SCSI to USB interface is designed, then
all it would really take to implement it on the Apple IIGS is a
driver.

Ethernet is not here more because of the lack of will from Apple
than from lack of capability.  After all, the Apple II Ethernet card
was real and canned just before release.  System 6.0.1 is mostly
set up to support Ethernet.
