Any composite video display will work as a monitor for an Apple II.
Even a TV/VCR with a video in RCA port should work without any problem.
(images of subLogic flight sim on a 54" big screen come to mind)

I would imagine that there is still a market for that type of display...
if a computer store doesn't have it, maybe a video tech stoe would...
