That's because DOS 3.3 does not normally support hard disks.
One method is to save them as "DOS3.3 Launcher" disk images
on the ProDOS partition. Then you can use a ProDOS program
called DOS3.3 Launcher to boot the files.
Think of DOS 3.3 Launcher as an emulator except without the
CPU since you've got a real IIe (well, the IIe card is close to
a real IIe).

Sure, it is called ShrinkIt! and it works on an Apple II. There is
a Mac version called Shrink II, but it was commercial. Since
you've got a IIe card, get the IIe version.
