I don't think there's anything physically dangerous about files dated 00/00/00.
I've been running 2000 under ProSel-16 both ways (unfixed and fixed) for
several months, will no ill effects other than sheer confusion when some files
are dated 00/00/00. Several other people in my test group have reported both
success and happiness with my patches. Since the fix is readily available and
easy to apply (we'll do it for you if you don't want to), there's no reason at
all not to use it, and thereby have good dates. Not having the fix would not be
fatal, it would just be like not having a clock. You'd have times, but not
dates.

[No Date] is a ProDos function, but it is generally overridden by Apple II
programs, which have their own unique criteria for [No date]. Many of them use
[no Date] not only for 00/00/00, but also for dates from 01/01/00 to 07/31/00
(examples: ProSel and Sneeze).
