The 74S287 are 256x4 bit proms. With an adapter, you can put them into a 2716 socket and dump the data.

A PAL16L8 has a security fuse that prevents reading the fusemap. However, this is a fully combinatorical device, without internal memory. Assuming you know which pin is input and which is output, you can wire an adapter to an EPROM socket and dump the state table.
