Here are a couple of sources:
* Sun Remarketing. High quality refurbishing, but quite expensive
* eBay (or other auction houses). Several IIe's are currently listed
(most under US$20).
There are others, also check out comp.sys.apple2.marketplace

Generally the 5.25 floppies are not readable by other machines.
However, you don't have to get an IIe specifically, a IIc (the IIc
will probably get you started the quickest since the floppy and serial
are already built in), or IIgs could work as well.
However, 3.25" ProDOS disks can be read by the Macintosh.
Once you can read the data, you can then use a terminal emulator to
transfer it to the system of your choice.
