You can't get GS/OS to boot from HFS.

According to a post by David Empson, GS/OS uses code in the
boot file "ProDOS" in the root directory of a GS/OS boot volume
to access the ProDOS file system and load the essential files
before hitting the FSTs.  Then it loads the ProDOS FST and uses
that.

Apple provides a separate boot file for booting over an AppleTalk
network so that GS/OS can be loaded to the extent that the
AppleShare FST is loaded.

Sadly, Apple never did provide a boot file for HFS.  It would be
possible to do it, but Apple never saw fit to give us anything
but the HFS FST.  Without a boot file to get TO that FST, there
is no way to boot from an HFS volume without first loading
GS/OS from a ProDOS or an AppleShare volume.
