You are in for a big disappointment trying to use CDs on a //e. Only one CD
with ProDOS volumes exists to my knowledge, namely the IIgs system 6.0 disc.
A //e can't read any of the file systems normally found on CDs.

People wanting to use Apple IIs for serious use should get a IIgs. They can
be had for a song or less nowadays and can do at least some of the stuff
people use computers to do in the '90s.
