What you probably want is a IIgs or IIc reference manual that covers
the SmartPort API.
Pretty much all Apple II Disk peripherals (including 'Slinky' RAM
cards) implement that, and specific information below the level of
Smartport is (or should be) irrelevant to your application.
In case the naming is confusing, SmartPort is not just the disk port
on the back of a //c onwards Apple II, it also specifies a standard
API through which Block (and Character) devices communicate with the
host OS.
It was called Protocol Converter in the original //c UniDisk
implementation. Googling on that may turn up some additional
documentation you might find interesting.
