If I remember correctly, Publish It! also allows the creation of
Postscript files.  Try selecting "LaserWriter" or "LaserWriter Pro" from
the "Choose Printer" dialog (found under the apple menu).  Then choose
"Print" (under "File") and then check the "Print to Disk" box before
clicking on "OK."  You'll get a save file dialog, and the a Postscript
file written to the directory of your choice.

PS  Publish It! was published by Turning Point Software.  My version is
v4.00, copyright 1987-91.  I don't know how readilly available it still
is, but it was (and is) a great program for a IIe or a IIgs.
