You really only need to give up one slot to use AppleTalk on
a ROM 1 machine.  Here is a typical non-Appletalk config:

Slot 1-Printer
Slot 2-Modem
Slot 3-80 Column
Slot 4-Mouse
Slot 5-3.5" drive
Slot 6-5.25" drive
Slot 7-Hard Drive (RamFast, Focus, etc)

Startup Slot: 7

Same machine, with AppleTalk:

Slot 1-Hard Drive
Slot 2-Modem
Slot 3-80 Col
Slot 4-Mouse
Slot 5-3.5" drive
Slot 6-5.25" drive
SLot 7-AppleTalk

Startup Slot: 1 or Scan

ROM 3 machines are the same, but swap slots 7 and 1 in the 
AppleTalk scenario.
