I love it; I have done the same thing as you -- assembling a lab out of
"discards" no one wants or knows how to use. Drop by our class web site
to see what we have done.
As for the monitors, I know the B&W GS monitors will work, cuz I have
some on our IIes. We got Some GS machines that didn't have color monitors
-- the school that oredred the years ago figured what for? -- so we got
B&W -- have since scrounged/swapped for color for the GS, so use the
other on the IIs
 
Keep up the good work & tell the kids it is a part of computer history! :)
