Probably 95+% of them will work, except for //e auxillary slot
ram/video cards with a 0% chance. However, the GS provides many
functions built into the the motherboard, so you may not want to
bother moving over 5.25" disk controllers, serial controllers, or
mouse controllers. Also, you may have to give up a builtin GS port for
cards moved to it.
If you could provide more info on specific cards that you'd like to
move, then more specific answers could be provided.

(FAQ) at http://www.visi.com/~nathan/a2/faq/csa2.html section 5.* Macs
with System 7.5 or better, use the PC Exchange control panel. Before
that, the Apple File Exchange app. Many have reported lots of problems
getting recent macs (especially powermacs) to reliably write to 800K
3.5" disks, as Apple has gone to cheaper and cheaper 3.5"
mechanisms. You may find that older Macs can work more reliably.
