The Apple //e Hardware Reference Manual and GS Hardware Reference
Manual (written by Apple, pub by Addison-Wesley) are good technical
intros to what the slots want. If you're a hardware hacker, you can
then go from the technical specs and interface that to any cards you
want to build. You may have to scope out used book stores or
comp.sys.apple2.marketplace for a copy of the //e HRM; I think The Byte
Works had the GS HRM for a while, but it's not currently on their price
list at http://www.hypermall.com/byteworks/bwad.html
