Jeff, check out Alltech Electronics (http://www.allelec.com/) and
Sequential Systems (http://www.sequential.com/). They still actively
support the II and make products for it.
As to upgrading the //e, bump it up to a 14.4k modem. These can
be found at Alltech and they work fine with the standard Super
Serial Card set to 19200 (also available from Alltech). You'll
want a good terminal program to go with the fast modem, so get
a copy of ProTERM 3.1 from Intec (see http://www.intrec.com/
for more information). ProTERM likes to use but does not require
a mouse. Sequential Systems makes the bitMouse for the //e.
