Hardware Question

I am looking to "upgrade" some equipment.  Currently, I am making recordings 
using Grass polygraphs.  I am feeding the signal into a PC, which basically
counts the number of spikes per hour registered by the polygraphs.  The
PC is starting to act up, and I have been toying with the idea of replacing
the current setup with a new and improved Apple //e based system.

Is there a card out there capable of receiving 16 or more analog inputs,
converting the analog signal to digital, and relaying the data to the
computer?  I would prefer a card that worked on both a //e or GS, but
it is not a necessity.
