Here's a project for adapting the IIGS RGB output to component,
although it apparently doesn't play nicely with HDTVs, due to the
IIGS's video timing: http://damntechnology.blogspot.com/2008/08/apple-iigs-rgb-video-to-component.html

While I was looking for info on various RGB-based conversions, I did
find this: http://www.arcadeshop.com/rgb/rgb2ntv4.htm

RGBS in, and your choice of component, S-Video, and composite out. (I
suspect it still won't play nicely with HDTVs, at least on the
component outputs, because it's not changing the timing, it's just
changing the color encoding.)
