   I believe the ScanJet line has all been flatbed scanners, and I
don't think I've ever heard of anyone using one on an Apple II. Apple
put in incomplete (preview only, no saving) scsi-based scanner support
into System 6.0.1 before leaving it to languish. Unless this scanner
uses the same protocols as several A2-capable hand scanners (Quickie
by Vitesse, and a few others), you'd probably have to reverse-engineer
a GS driver/scan app to use it.

   As to file transfer from Macs, Convert3200 from Shareware Solutions
II (http://www.crl.com/~joko) is about the best for converting from a
lot of 2D formats. It doesn't do jpeg (very few A2 programs can do
that decently and/or quickly), but GIF and a bunch more standard
formats are supported. Go bug some Mac FAQ authors for lists of
cheap/free programs that'll save in A2 friendly formats.
