The beetles eat pellets, so try to focus mostly on the open areas that
interconnect well.  Beetles only follow your trail, so you can use
that to your advantage by making a very long non-connected path
snaking around the play area.  Or you can make a lot of circular paths
and gamble that the beetle chasing you will take a different turn.
Worst case, the beetles will go down the dead-end paths and you won't
get the points for the stuff that gets nabbed, but you won't get
killed off either.
