There is a program called Music Composer that was released a couple
of months ago that has a sheet music interface and uses the MIDIsynth
tool (like Synthlab).  It appears to be like a Synthlab with editing
capabilities and support for more voices.

The Audio Animator is supposed to have better quality, but a bug in
the AA prevents it from digitizing above 36kHz.  The Soundmeister does
not have this problem.

A good MIDI interface for the IIgs is Opcode's MIDI Translator II,
available from Mac places.  It is sold for the Mac, but it works
well on the IIgs (it even has 3 MIDI out ports and a modem pass-thru).
