James, the UDC has TWO DB connectors.  The first one is the daisy chain port
and the second accepts one drive.  What you can do is use a 20-pin to DB
converter cable on each of your Disk IIs.  You won't have daisychain ports,
but that dosen't matter.

Connect your two Apple 3.5" drives to the first port by daisychaining them.
Connect one of your Disk II drives to the end of the chain, behind the second
Apple 3.5" drive.  Finally, connect your second Disk II drive to the second
port.

The UDC will magically map all the drives to different slots, 2 drives per
slot (or so it appears to software).
