apple2e new user ??s

I just acquired two apple2e and one apple ][ plus machines. 
We are planning set these machines up for public use in a low-income
housing building in Seattle, WA.(on Capitol Hill, FWIW)

Both 2e machines show "kernal OK".

We need Disk Operating System software and some simple word-processor,
spreadsheet, graphics, and games apps.

Very important is to have some kind of self-running tutorial for the
computer itself.Otherwise, the group learning curve is going to be fatally
slow, IMHO.
Is there anything like "Mac Basics" for the Apple IIe and ][ plus?

Any advice about hooking up anyone's TV to use as a monitor is also
needed.So far, we have only one monochrome monitor.
