The Mac should be able to handle the text files fairly easy, the trick 
is getting the files off the 5.25 onto a 3.5 diskette.  But that's easy 
if you have (or can find someone with--check your local school) an Apple 
IIgs with both 5.25 AND 3.5 drives.  Then all you do is copy the files 
onto the 3.5.  Then any Mac with System 7.1P or greater will be able to 
recognize the 3.5 II format and let you just drag the files into any 
folder or the desktop.  You'll beable to open them in ClarisWorks or, 
probably, another application, and save them out in another desired 
format.

I've set-up a IIgs for our teachers in one of our buildings to do just 
what you want to do and it works great.  The kids keyboard their text 
for their stories in AppleWorks on an Apple //e in the classroom, and 
then, using the IIgs, the teacher copies the files to 3.5 diskettes (as 
I explained above), and the kids finish their projects (putting in 
graphics, etc.) on the Macs in the lab.
