You will almost certainly not be able to boot the IIgs from a PC, as
this requires that the PC implement that Apple II network boot facility
(which is not used by any other AppleShare client).  This has even been
removed from the AppleShare server software on the Mac as of version
4.0.

I hadn't tried this before, so I just set it up between my Mac and IIgs.

Yes.  You can share an entire volume, or set up a shared folder on the
hard drive (but not both).  You can presumably set up multiple shared
folders, but I haven't tried that.

As far as the IIgs (or any other client) is concerned, the shared folder
is just a file server hard drive.
