They're GS files _stored_ on a mac. The actual file contents should
be no different whatsoever than when the files were stores on a
NFS-mounted unix drive served by ftp.cco.caltech.edu, which was a Sun
machine. Do not treat the Apple II files as anything other than A2
files.

Please provide more information. What programs and commands to that
program are you using to get the software off apple2.caltech.edu. How
are you making sure that binary mode is selected in the download? How
are you getting these files to your Apple II (include all programs,
commands, settings, etc), and what Apple II programs you are using to
unpack. Include _ALL_ error messages, etc. If you have to write out
a few pages of info, so much the better.
Just saying "it doesn't work" isn't enough to help. Your files
are being transferred through several programs and computers, any
of which may be at fault. Giving full details is the only way that
good, accurate, and specific info can be given to you.
