I've done very similar things before. Like modifying an IBM CGA
monitor to be analog RGB - that's dead simple. Any PC CGA monitor can
be made to work on the GS just by bypassing the digital section.
Adding RGB to a TV is also not that hard - just be warned that a lot
of TV's are "hot chassis", and your "ground" will actually be one side
of the AC line. An isolation transformer will be required here.

A black and white TV makes a very workable monochrome composite
monitor when suitably modified. I've done a few that even handled 80
columns well.
