As far as I know to use the 1.44 MB drives on the GS requires the same
card as it does to use them on the //e. So in a nutshell I don't
believe it would be possible to do what you want with an old 1.44 MB
Mac drive. As to MSDOS disks there are utilities that Peter Watson
created that will let you read and write MSDOS disks with a GS.
