Define "new version". This implies that you do have access to an "old
version" of AppleShare.
To actually boot a IIgs over LocalTalk (without a boot disk) requires a
Macintosh server running AppleShare 2.x (takes over the whole Mac) or 3.x
(can be run in conjunction with other applications, requires System 7.0 or
later). AppleShare 4.0 and later do not support network booting of an
Apple II.
The System 7 File Sharing facility does not support network booting of an
Apple II. If you are using File Sharing, your only option is to boot the
IIgs from a local disk, mount the server, and you can then access files
and/or IIgs (or 8-bit) applications on the server.
The easiest way to do this is to perform the following steps with the
System 6.0.1 Installer. I don't have the list of scripts in front of me,
so the names may be slightly out.
1. Get a new 800K disk (formatted for ProDOS).
2. Boot the Installer, and go into Customize.
3. Install "*System 6: 800K Disk" onto the new disk.
4. Install "Network: Local Boot" onto the disk.
You should now have a GS/OS boot disk which will allow you to log onto the
server. It does not contain Finder, so you will have to run that from
another disk, or preferably from the server. The local boot disk is your
system disk, so desk accessories, etc. have to be placed on this disk.
When you boot the disk for the first time, it will prompt you for a
machine name, that will be saved on the disk for subsequent boots. You
should set up a user on the server with the same name.
You should be able to install IIgs system software onto the server by
booting the local boot disk, logging onto the server as a registered user,
then using the program launcher to run the Installer and installing
"*System 6: FDHD or Hard Drive" onto the server. Unless you intend to get
hold of AppleShare 3.0, you might as well delete all the system software
except Finder and its associated data files.

The Mac system software version doesn't matter, as long as it is at least
System 7.0, has File Sharing available and enabled, and a user has been
created for the IIgs (you could log on as "Guest", but this will result in
limited access).
It doesn't matter whether you are using "classic networking" or Open Transport.
