There are a number of different CD-ROMs available for the Apple IIGS.
Off the top of my head....

The discQuest Series: Sequential Systems' discQuest supports about 18 
different CD-ROMs that were created for other computer systems. There's an
encyclopedia available that discQuest supports, as well as CDs for
Sherlock Holmes, Audoban (sp??) Birds, Family Doctor, etc.

GEM: The original CD-ROM that's now more than 5 years old. It was put
together originally for the National Apple User Group Convention, maybe
in 1990 or 1991.

AUGE: A collection from about a year ago that was put out by the German
Apple II User Group.

Golden Orchard: This is Digisoft's collection of Apple II freeware,
shareware, and public domain software. There's information online at
Hypermall about this CD.

Studio City & Script-Central CD-ROMs: These are indeed "archives of
stuff that is currently available on disk." There are 2 CDs available
that contain the entire collection of Resource-Central's 2 hypermedia
based publications.
