I connected a Canon BJ-200, driven with this same driver. It works
great. An alternative to a parallel card can be a serial to parallel
converter, which does not occupy a slot. The parallel card should
work just as well.
The BJC-4100 should work fine with the same driver (the driver
seems to support color, but I can't test this feature on a
B&W printer, of course.)

This is not necessary. The parallel card driver supplied with
System 6.0.1 can be set to see the card in any slot except 3 (please
correct me if I am wrong about this). Most modern ProDOS 8 software
will also recognize the card in any slot.

It should work with the Freeware Epson LQ driver and a parallel card
(or a serial to parallel converter connected to the printer port).
See comments on BJC-4100, which apply also to the BJC-210.

You will want the Freeware Epson LQ driver, not the Epson driver
that comes with System 6.0.1. The difference is significant because
the Apple driver is designed for 9-pin Epsons so output to Canon BJs
is terrible with it (blocky and saturated). The Epson LQ series are
24-pin printers with comparable resolution to the Canon BJs, so
the Freeware Epson LQ driver has much better output.
Sources for compatible printer driver:
apple2.caltech.edu has epsonlq.shk
ground.isca.uiowa.edu has canonbj.bsq
