Help with Apple //e

My name is Mike Artz and I am beginning my Eagle Scout project (Yes, I
am 17).  I am trying to help out our local preschool get their
computer system set up because I know quite a bit about computers in
general, as well as specializing in Macs.  But alas, I am stuck in the
Pentium/Power PC generation and have little experience with the older
models.  The only thing I remember is my 5th grade computer class
where we had to turn the disk over to use both sides.  Unfortunately,
the school has only //es which are great for preschoolers but with
which I have no experience.  If anyone could direct me to a good
starting book or refence, or if you have some helpful tips, I would
appreciate it greatly.  Thanks
