I usually type ":set wm=5" at the beginning of the editing session, or put
it in my .exrc file.  This makes vi automatically wrap my text when I get
within 5 characters of the right-hand margin.

For dealing with text that's already too wide, you can reformat a paragraph
by moving the cursor to the beginning of the paragraph and typing "!}fmt"
(assuming that you're on UNIX, and you have the "fmt" utility).  There are,
of course, other permutations on this if you want to reformat something other
than a single paragraph.
