A few people have already mentioned that the "e" stands for Enhanced.

There may be another answer.  I remember soneone telling me that Apple
experimented with b, c, d, and e configurations.  Although I am skeptical about
this story, I distinctly remember that Call A.P.P.L.E. had an article called
"Revving up the Rev. E."  So who knows?
